Cooking roast beef. How long?

MakeMineACafPow · 08/04/2012 14:15

I have just found myself the proud owner of a 2.2kg silverside of beef due to my mum having a really bad back which has left her unable to cook a roast today. I have never done roast beef before and the recipes I have found online range massivley on cooking times [buconfused]

I want it to still be pinkish inside. Could anyone tell me what temp to use and for how long. (I have a fan assisted oven BTW)

Thankyou!

I'd probably give it an hour and a half in a very hot oven....from room temp

I use the skewer test to see if it's done.... so skewer into the thickest bit for about 20 seconds and apply skewer to inside of wrist or top lip if you are brave and quick

well done will give "buggerme, that's hot" and possible scarring so really just a feel don't brand yourself.

rare (for beef) generally gives a warm....then i give it another 15-20 minutes for fear of poisoning everyone

Do let all joints rest for all least half an hour though, out of the oven before carving.

Silverside's not a great jpint for serving rare TBH. I'd pot roast it with red wine and veg.

Thanks catsmamma thats pretty much what I had decided timing wise, so to have it confirmed helps alot. Good tip for checking how well done too. [busmile]
