Who's baking today?

I have just made a raspberry dessert cake, chocolate obv! [bugrin] I think I might have left it in a couple of mins too long (our oven is ferocious), but it still looks delish. This is for the Easter tea party that the hospital where my mum lives is having.

Also making James Martin's white chocolate Easter cake that was in Closer Magazine that I bought that someone left lying around. And am also going to attempt to make my first lemon meringue pie this afternoon, but have cheated and bought a ready made pastry case. Both for tomorrow's Easter lunch at SILs.

Would love to know what other people are rustling up today, and sucesses and disasters!

Bloss

Me! I'm making a pistachio tart from Moro. Made the pastry and bitter orange ice cream yesterday. Tomorrow is beef Wellington with dauphinoise and ottolenghi green beans. I'm off to post for Wellington tips. I love Easter cooking! I'm in a Food Mood! [bugrin]

CogitoErgoSometimes · 07/04/2012 11:20

I have made some chocolate chip muffins and, to be dead festive, welded a couple of Mini Eggs to the top of each one with a blob of melted chocolate. Move over Nigella....

UntamedShrew · 07/04/2012 11:22

If chocolate cornflake cakes count, the 3yo DTs and I have been at quarter to seven this morning

We made shortbread biscuits. With a reindeer cutter because that is what DS chose. Completely ignored my Easter bunny cutter!

Toeuffeta · 07/04/2012 11:44

Pistachio tart mmmmmmmmmmmmmmmmmmmmthat sounds divine any chance of posting the recipe please? [busmile]

I have made the sandwich cakes for an iced lemon curd layer cake, which I will assemble tomorrow. Also pastry for a bakewell tart which is in the oven now and leftover pastry the DC have made jam tarts with.

Having a sit down now. Done it all this am as pork is going in the oven for 24 hours at 12.

Brew anyone?

UnChartered · 07/04/2012 11:45

i'm going to make a lemon curd pudding - mix it all up together then it separates in the oven to leave a curd at the bottom, but a sponge mixture on top [bugrin]

Toeuffeta · 07/04/2012 11:49

Pecan butterscotch cheesecake. Recipe from the Hummingbird Bakery Book which I treated myself to earlier in the week.

Looking good so far. Waiting for the cheesecake to cool so I can do the butterscotch glaze.

Got mil and dm coming for lunch tomorrow so I hope it tastes ok. First time I've attempted a baked cheesecake.

ChippyMinton · 07/04/2012 13:21

It all sounds yummy.

I'm going to make a New York-style baked cheesecake with a raspberry coulis sauce for afternoon tea and easter egg hunt tomorrow.

motherstongue · 07/04/2012 13:31

doing my good deed for the day, baked for an easter afternoon tea at the church. Merringues, puff pastry cream horns, carrot cake and lots of lovely little cup cakes with easter chicks and mini eggs to decorate. Exhausted now, so will just have to sit back and enjoy eating them at the tea.

Dressdown - which Hummingbird Bakery book is that? I have the first one but it's not in there - only have Baked Cheesecake in mine. Is your the Hummingbird Bakery Cake Days book?

wildfig · 07/04/2012 15:25

simple coffee and walnut cake, to have with a pot of tea.

love the Polenta Dog Biscuits, hope! Where's the recipe from?

Ciske · 07/04/2012 15:33

Cheesecake is in the oven, in bain marie. Had great time with DD2.5 mixing the cookies and the ingredients - cleaning the kitchen afterwards took longer than making the cake.

Problem is, I just realised I forgot to waterproof the baking tin, so who knows what the end result will be. Confused

DressDownGoodFriday · 07/04/2012 16:00

rougepixie yes the Cake Days book.

TheGoddessBlossom · 07/04/2012 16:41

have made 2 lemon meringues pies, but not sure whether to do the meringue topping now or in the morning. What do you think?

OP posts:
UnChartered · 07/04/2012 16:43

i would wait until morning to do the topping tbh, it starts to break down and go syrupy. it doesn't taste any different, but presentation-wise it might not be so good
