Does anyone have any easy recipes for cod?

My favourite is one I never get to make as DH doesn't like fish with chorizo but it's a really nice and easy to make dish. Use a mid sized saucepan with close fitting lid.

You need a good sized piece of cod (no skin) per person, two of the small chorizo sausages (sliced into discs) or a piece off a large chorizo sausage (diced) and four large tomatoes (sliced). Fry off the chorizo until nicely browned, then lay the fish on top of the chorizo and lay the tomatoes on top of the fish. Season. Put on the lid and cook for about 12 to 15 minutes. Done. Serve with salad and bread to mop up the juices. :)
