I have just a made a recipe where not all the egg whites were needed - does anyone have a recipe where I can make meringues based on weight rather than 1/2/3/ eggs etc.

I need to get the sugar to egg whites ratio right ...

1 egg white weighs about 30g, so that might help.

Yeah 3 egg whites to 6oz sugar. Basically double sugar in ounces to number of egg whites. Teaspoon ww vinegar and same of vanilla.
Whisk whites
Add half sugar and whisk again
Fold in rest of sugar
Easy peasy!
