Carrot cake recipe please

A while ago now I lost my lovely carrot cake recipe!

The last few years I've just fudged together random recipes when I make one, but I can't find my notes on that now.

So I need your best every carrot cake recipe please!!!

I far prefer carrot cakes made with oil (rather than butter) and in the past I have added nuts, tinned pineapple etc to the cake.

175g brown sugar
200g s.r. flour
150ml sunflower oil
200g grated carrots
2 eggs, (i use large)
2tsp ground cinnamon
1tsp bicarb
grated zest 1 orange

carrot muffins

6oz wholemeal self raising flour
3oz dark muscovado sugar
2tsp baking powder
3eggs
1tsp vanilla extract
8oz carrots,grated
4floz rapeseed oil
pinch allspice to taste

preheat oven 180oc/350of/gas4

mix flour,sugar and baking powder

in a jug mix eggs,oil,vanilla and spice

make a well in flour mix and add contents jug and the carrots.stir to combine

fill 12 fairy cake cases in buntin

bake middle oven 25-30mins til golden

I like Rachel Allen's carrot cake, very moist but you only need to use half if the cream cheese topping recipe suggests. Have a google, recipe definitely available online!

I did the Faye ripley one and it was delish. Five days on and it's just as good. Google for the recipe.....or I can re-type it later.

Mary Berry's uses oil and is lovely.
