Banana cake using dark brown sugar?

I had a recipe for the best banana cake ever- it used dark brown sugar and a little mixed spice.

I lost it.

Has anyone got anything similar?

All I can find are light brown or white sugar recipes, which won't give the dark colour and moist consistency this one had...

i would recommend nigel slater's black banana cake recipe (on the bbc food website, sorry can't do links) - have used this as a starting point time and again with varying degrees of tweakage and have never looked elsewhere - it's fab!

though the mixed spice sounds nice...

It's not the recipe you're after, but I've used this one as states & with dark brown sugar (as it was all I had left) and it was fab!

Just substitute dark brown sugar and add spice to taste.

Nigella's one from Domestic goddess is good and reliable.

I made one yesterday, mising up 3 recipes & various final bits in the cupboard created the one below - easiest & yummiest ever

Mix up:
3 very ripe bananas
3 eggs
200 ml sunflower oil
300 flour (1/2 plain; half self raising)
225 g sugar (1/2 caster; 1/2 dark brown)
1 tsp baking soda
big handful of raisins
1-2 tsp of cinnamon or mix spice

bake 1 hr at 180 degrees

(wanders off to get herself another piece)

Sorry for silly question- but if I want to reduce the amount of mixture by a third, then does this sound about right?

2 bananas
2 eggs
130ml oil
200g flour
170g sugar
2/3 tsp baking powder
1 tsp mixed spice/cinnamon

I am not using raisins and found that I had to add a little more sugar to oricella's recipe, so added another 20g to this one- is that wrong?

I am neither a baker nor a mathematician, so any advice welcome...
