White sauce and batter

Two things that I an so pleased I know how to make.

For example, stuck for something to add to a salad this evening I threw in some pasta, made a white sauce, added chives, mint and mixed herbs and voila! A really surprisingly nice pasta side dish.

It has to be one of the most useful things I've taught myself to do.

Enlighten me? What is your 'couldn't manage without knowing' kitchen tip?

mayonnaise! ....love it and home made is gorgeous, esp on steamed new potatoes with chives/parsley to make a warm potato salad.
