summery but healthy?

its hot! too hot for spag bol, sossies & mash and all the other things DH wanted to put on menu for next week

what do you recommend for summery yet healthy (trying to lose weight so avoiding goats cheese etc) but not hours in hot kitchen
am I asking the impossible?

We love salads of any raw veg mix topped with marinaded chicken and served in a crispy tortilla basket. YOu make this by spraying a large tortilla with olive oil and moulding over a wire sieve. Bake in oven until begins to brown. Alternatively jacket potatoes with tuna and spring onion, stir fry with cous cous or pita bread, rottisserie style chicken with crusty bread and salad, pasta and pesto, grilled fish and new potatoes.

Have you heard of Gizzie Erskin? She did a series on Channel 4 called Cook Yourself Thin and did some really tasty yet healthy meals. She did chicken kebabs and they were AMAZING!!! I do them every summer now because they are so moreish, I gave the recipe to a friend and she did it when her friends came over for dinner and they all wanted seconds!! Noodle, chickpea and chicken stirfry; Fry 1, cubed chicken breast in oil,1 tblsp of grated ginger, 1 tsp of crushed garlic, salt, pepper, 1 tblsp of tomatoe puree, juice of 1 lime, 2-3 tblsps of worestershire sauce, cook for 4-5 minutes then add 1 tin of drained chickpeas and 4 handfuls of ready cooked noodles, garnish with chopped corriander leaves and cook for a few minutes if you want it spicy add chopped chillies,
