Had a bit of a run on eating far too much meat in the past 4-5 days, just how it's been! So, I need to use up:
Aubergines, Peppers, Leeks, Chillis for a hearty supper. I'd prefer NOT to be using this with a tin of tomatoes as we have done several things along those lines recently, so looking for a non-tomatoey option on this. Something maybe to go with Jacket Spuds or Rice? We quite like spicy stuff so some kind of stir fry and or curry flavoured dish might work, I'm just not sure where to start.
I also have masses of eggs, but I was really struggling to see how they would fit in (other than egg fried rice??)...
