Give me some lovely fish recipes

My mum's coming to stay tomorrow and she absolutely adores fish, but doesn't often get the chance to eat it (Dad is a very strict vegetarian). I'd like to cook her something very fishy, fairly simple and ideally, something I can cook in advance.

This fish recipe is one of my favourites meals of all time, but I don't have the exact measurements as I just bung it together really, but here goes:

1 big bag of spinach
2 cans tomatoes
2 cloves garlic
2 onions
Tomato purée
1 bag corriander
White fish x 6 pieces
Half loaf crusty White bread
Olive oil

Layer the spinach on the bottom of a lasagne dish and put the white fish on top of this. Then start making the tomato sauce- basically in a sauce pan fry the onion & 1 clove of garlic, add tomatoes and purée for about 5 mins. Pour over the fish.

In a food processor make breadcrumbs then add in the corriander, garlic clove and a good glug of olive oil, whizz for a bit and then cover the tomatoes with this.

Bake for about 30- 40 mins at 180 c

Hope you mum likes whatever you end up cooking!

Orange & coriander salmon tab down a bit is lovely with cous cous or fresh bread and salad. This has to marinade for a few hours so ready any time.

I will track down a hot & sour salmon which is lovely (cooks in 3 mins once sauce prepared in advance)

Jamie Oliver's fish pie. I like it has spinach and boiled eggs in it but the sauce is great as well with French mustard.

Not too fishy as such but we like cod,haddock or cobbler which has been rolled really thinly with a rolling pin coated in panko breadcrumbs, garlic powder and sesame seeds. SImply fry in oil.

Mum does a fish dish which works with lots of different kinds, (cod, haddock, salmon, seabass) and is basically slice of fish spread with pesto and topped with a mixture of breadcrumbs, pepper, parmesan and lemon zest. Bake until cooked through.

King prawn kebabs. Mix up marinade of sesame oil, ginger, garlic and chilli. Marinade for at least 30 minutes. Arrange onto skewers. Fry for 1 minute both sides.

Scallops fry nicely in butter and go well with crispy slices of black puddinga nd bacon.

My absolute simplest fish dish is salmon spaghetti.
Put the pasta on to boil.
Sautee shallots, mushrooms and butter.
Add the sautéed mix to the drained pasta with some double cream.
Once heated through add smoked salmon (the off cuts are ideal) and some dill.
Perfection in less than 15 minutes.

Pan fry fish in a little oil till golden then leave on side, now in the same oil add butter, sliced garlic, chopped capers, chopped cherry tomatoes, and chopped basil leaves good squeeze of lemon, stir well then add just a pinch of flour and cook for a further minute,now pour the sauce on top, serve with new potatoes.
