Sausage recipes please

I am sick of doing the same thing with sausages which basically is sausage, mash and veg lol. Any nice sausage recipes?

My kids love my sausage and apple bake. Brown sausages for 3-4 mins and place in long casserole dish. Add chopped red pepper and onion to pan plus very small new potatoes (or chopped up larger new potatoes). Add half pint of chicken stock and bring to boil. Add to casserole dish with sausages. Quarter 2 apples and tuck wedges between sausages etc. cover with foil and place in oven for an hour at 190 c. The sausages come out really tender and taste delicious.

Hi There

Try a search on Google for Sausage Ragu - there are some great recipes out there - especially ones with fennel seeds and paprika.

I have an old "tried and tested" Sainsbury recipe but it is stored on PC based recipe program and I can't work out (yet) how to transfer it... but I will see what I can do to post it here as it is a great recipe which I roll out at least once a month...

I quite often do a risotto with sausages, garlic and onion chopped up and tinned tomatoes and stock, I add whatever veg we have in towards the end of cooking the rice and have been known to shove some paprika in for a smoky taste, or whatever flavours come to hand. Its an easy way to use up leftover stuff.

sausage soup....??

onions and celery sweated in a pan, brown the sausages and cut into pieces, or you can squeeze the meat out of the skins in balls. Add a tin of tomatoes, maybe some beans if you like, plenty of stock and maybe some passata if you want it well tomatoey.

Toad in the Hole is also a big favourite here, with red onion in the bottom, cooked with the sausages before the batter goes in.

Fry sliced onions and mushrooms, add sausages cut up into chunks. When everything is cooked stir in creme fraiche and a dollop of wholegrain mustard. Serve with pasta and crusty bread.

I chop up sausages and use them in place of mince in a bolognese - we all prefer it!
