Anyone manage to get homemade potato wedges to crisp up?

We use Maris Piper spuds, scrub them, slice them into 8, parboil them for 5 mins then coat them in a tbsp olive oil/ tsp of paprika/ tsp spicey season all/ crushed garlic/ desert spoon of polenta flour (spelling?) and them bake them for 40 mins at 180 in a fan oven but they don't always crisp up....just wondering if I'm doing something wrong?

Ok, so they were good but I think we cut the wedges too fat this time so they weren't as good as they could have been IYKWIM? I think it is just going to take a little practice but we will get there I'm sure! Smile

I always use non stick baking sheet and they crisp up fine on gas mark 8 for around 45 minutes (no par boil)

hi luvy marinate your wedjes in oil salt pepper paprika and a tsp of corn flour then mix well bake on 200 for 15-20 minutes

To get crispy wedges you need to bake on high, 200/ gas mark 6. no need to parr boil, bake for 20 minutes but season with dry herbs, oil salt, pepper and good pinch of corn flour

I can always taste raw potato if wedges/roasties haven't been parboiled first Sad.
