Please would you let me have any of your tried and tested vegan cake recipes? Given that my usual cakes are full of chocolate, eggs, butter and cream, I'm a bit out of my depth. Thanks.

Doves Farm do a lovely banana cake - recipe here - which I make without egg - if you replaced the butter with a dairy-free spread then it would be vegan.

Vegan Carrot Cake
4 cups grated carrot
2 cups flour
2 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ground ginger
1 ½ cups demerera or brown sugar
¾ cup raisins
½ cup chopped pecans
1 cup unsweetened applesauce
1 cup oil

Icing

â…“ cup vegan margarine (softened)
â…“ cup vegan cream cheese
2 â…“ cups icing sugar
1 teaspoon vanilla extract

Preheat oven to 350ºF 180C or Gas 4

Mix all the dry ingredients together.
Add the applesauce, oil, carrots and raisins and mix until everything is well combined.
Pour into a greased 9?x 13? baking pan and bake for 40-45 minutes or until a skewer comes out clean.
Let the cake cool in the pan for about 10 minutes and then turn out on to a cooling rack. Let it cool completely before icing.

To make the icing, cream margarine and cream cheese together until combined. Add icing sugar â…“ of a cup at a time and continue to beat until smooth and creamy. Add the vanilla and mix again. Refrigerate until ready to use.

That's a 1/3 of a cup of margarine and cream cheese and 2 and 1/3 icing sugar. Then you add 1/3 at a time.

I made this recently and it was really tasty (and i'm not even vegan). We kept half as a cake and made the other half into cake pops to take to friends.
