It might be mothers day but I'm sat here with my pen running dry looking for inspiration... I hoped to copy all your ideas for this week!

Mon: chicken soup and crusty bread (using left overs)
Tue: Blue cheese potato cakes with watercress and salad leaves (bbc food)
Wed: pasta bake with smoked pancetta (gino off bbc food)
Thur: veggie burgers in cheesy buns (out of freezer)
Fri: cauliflower cheese with bacon and macaroni
Sat: Pizza and garlic bread etc
Sun: chops (whatever is best price) and braised lentils.

Today: puy lentil chilli (my new super-delicious patented recipe) with rice, cheese, guacamole, tortilla chips, salad
Tomorrow - feta, savoy and potato pie with roasted tomatoes
Tuesday - macaroni cheese (omelette for dd1) with salad
Wednesday - paneer and vege curry
Thursday - veggie Shepherd's pie (filling done in the slowcooker)
Friday - something with homemade spicy wedges maybe - quite fancy Hugh FW's murguez chickpea thing

Mon - fish cakes (homemade, frozen) with chips, beans and veg
Tue - chicken korma (sharwood sauce) and rice and veg
Wed - pasta and meatballs (homemade pork+beef, currently frozen) and (homemade) veg/tomato sauce
Thur - shepherds pie (homemade, currently frozen)
Fri - sandwiches, as we will be out
Sat - lasagne (homemade, currently frozen)
Sun - pub meal for me, airline food for DH and Granny's M&S home cooking for DC!

Feta pie thing - adapted from a Lesley Waters recipe:

Put a piece of ready rolled puff pastry on a greased baking tray
Top it with some boiled until just tender new potaotes, some steamed savoy cabbage, some fresh thyme, some chopped feta, some halved cherry tomatoes if you like them (I don't so leave a section of the pie tomato free!) and some chopped spring onions. Egg wash the edges. Stick another piece of pastry on top and crimp the edges together. make a couple of big slashes in the top and eggwash it all over. Cook until lovely and puffy and golden.

You could adapt it in lots of ways: eg: I suspect that hard boiled eggs might be quite nice in it but dd1 won't eat them (so I will need an egg-free area of pie if I do this!).

Lentil chilli -

fry onion, diced carrot, garlic, red chilli. Add paprika, dried thyme, a teaspoon or so of cocoa, a cup of freshly made coffee, a small bottle of lager, a teaspoon or so of chipotle paste, a tub of passata, some red lentils and some puy lentils. Shove in the oven until the lentils are nearly tender (it will need water every now and then) Just before it's done, add chopped red and green pepper plus drained beans of your choice (I like butter beans better than kidney so use those) and cook until lentils tender. Eat with soured cream and cheese, plus rice or bread, plus salad etc.

Forgot to say that I add a load of finely chopped fresh coriander to the chilli, with more scattered over to serve.

I don't assign particular meals to particular days. I just decide what I fancy and what my schedule is like on the day.

I cooked a gammon joint on Sunday so that kick started our week
Monday - ham, sweet potato wedges, roast veggies
Tuesday - ham & eggs gratin (an old Delia recipe, basically a baked risotto topped with hard boiled eggs & cheese sauce)
Wednesday - chicken & chorizo casserole
Thursday - pizza & salad
Friday - Dover sole, new potatoes, baby veg
Saturday - smoked salmon & asparagus pasta (made with Philadelphia)

Leftover birthday cake has featured heavily on our meal plan this week too Smile

My plans run Saturday to Friday, so this week it's been:
Saturday - Spaghetti carbonara, salad and garlic bread
Sunday - BBQ pork ribs & coleslaw
Monday - Moroccan Chicken with sweet potato mash (recipe I found on BBCGoodfood.com which was really tasty.
Tues - Roasted butternut squash and lentil salad with feta, watercress, sugar snap peas,rocket and a balsamic, soy dressing. (Another bbcgoodfood.com recipe and bloody lovely)
Weds - leftovers of Mon & Tues dinners, because I made too much.
Thurs - Salmon fillet and avocado, watercress & sugar snap pea salad (Nigella)
Fri - Baked sea bream and greek salad. No recipe, will just bake with lemon, herbs & olive oil. Am using up the feta I bought for the butternut squash salad.
