Healthy Picnic Ideas

I'm hoping for some picnic inspiration please, We love a picnic, but the challenge is that I'm a vegetarian doing slimming world and DH is diabetic. DD will eat pretty much anything.

Picnics for us are fairly simple, we have a cool bag, ice packs, flasks, plastic bowls, sporks etc, I usually aim for a filing lunch and something left for a snack before we head home.

We had our first picnic of the year last weekend, I did;

  • Nice ham sandwiches (wholemeal rolls and low fat olive oil spread)
  • Egg and extra light Philli sandwiches (Wholemeal roll no spread)
  • Roast vegetable couscous with a fat free yogurt based garlic and herb dressing. (veg roasted in a low fat spray)
  • Velvet Crunch (low fat crisp/rice cake type snack) cheddar and spring onion flavour.
  • Home made (fat free and sugar free) carrot muffins with quark based topping
  • Apples
  • Grapes

We will probably have a picnic once or twice a month through the spring and summer, (national trust members who like to get our moneys worth) so I need more ideas, please share your low fat, low added sugar, picnic friendly recipes and ideas.

How old is your DD though? Just thinking about the whole grain / low fat / low sugar diet thing...

We both have sweetener in our tea these days :)

DD is 8 and thankfully not a fussy eater.

Soup.

Curried eggs.

If feeling rich, asparagus with low fat mayo or a yoghourt dip.

Houmous and pitta bread. Think Mediterranean. Tapenade, or tomatoes with a small amount of feta crumbled on top with black olives go well with baguettes or ciabatta.

Quinoa with bits like your conscious. It's a protein as well.

I think I've got a slimming world recipe for devilled eggs, good idea, I could sandwich them together for trransportation.
