Easy roast?

Ok, so im moving out of the family home soon (around a months time) but im collecting together using MN & other websites, recipes so that i dont need to buy a cook book when i've moved. I've written down a lot of chicken, pork, beef & mince recipes so far but id really like to put a roast on the list too. I know how long the meat cooks depends on the size of the meat but is there anything i can do to make it easy so i dont go cooking things like the potatoes way before the meat etc.

Roast potatoes: cook in a separate roasting tin, not around the meat. Par-boil spuds for about 7 mins, drain, add knob of butter and shake them in pan to knock the edges slightly - this makes your roasties crunchy not soggy. Put some lard / dripping / veg oil into it & heat in oven for 10 mins. Add spuds into sizzling fat & spoon over them. Put in top of oven for 40 mins - 1 hour (depending on heat & what colour you like your spuds to be). Turn them over whenever you baste the meat. Easy.

If you like marmite add a little of that when you shake your pan of spuds. It adds flavour without tasting marmite-y.

Put whatever cooking fat you are using into a separate roasting pan not the pan you've shaken your spuds in. Blush
