I am doing mother's day lunch on sunday (though the ingrediants need to be bought tomorrow morning) and need a vege alternative to the meat, but something that will go with the rest of the meal (roast pots/yorkshire pudding and various as yet undecided veg though probably carrots and kale).
The pudding is nutty so don't want to do something nut based.
I want it to be quite special as its for mothers day.
Only for one person so recipe needs to be able to be scaled down for one.
Also no aubergine or wheat and if possible reasonably low fat (though better something high in calories than fuck all).
I am completely out of inspiration, am going out tonight and have to go food shopping first thing in morning
Any ideas will be gratefully received.
