really luxurious salad recipes-special ocassion type thing

anyone got ant good ones-I need it to be pretty and tasty.

Lamb's lettuce
Grilled pinenuts
Dried cranberries
Grilled lardons
Big dollop of Soft goat's cheese mixed with garlic and olive oil to make a thick paste

Vinaigrette:
I teaspoon light mustard
8 tablespoons White balsamic vinegar
8 tablespoons grapeseed oil
Salt
Pepper

Is it meant to be the main course? I use Peter Gordon's Russian Salad for this - it's extremely luxurious, lobster being the starting point. Or do you mean a slad to go in as part of a special occassion meal?

Red onion, vine tomato, mozzarella, basil. Dressing made of grain mustard, red wine vinegar and olive oil. Mix it all up and put it under the grill until the mozzarella melts. Yummy!
