I did lamb shanks on Friday night. Could do it with shoulder. Brown meat in casserole dish. Take out. Fry onions and garlic. Add meat and any veg you have. Add chicken/veg stock and red wine if you like it. I added rosemary too. Chuck in oven for 1-2 hours. It was yum. Veg I added was carrots, new potatoes, broccoli and cauli. Hth.

I soften leeks and garlic, add lamb, water, potato, swede and other root vegetables when I have them. Sometimes parsley too. Bland but quite tasty and good for the DSs.

Fav caserole recipe for lamb in our house is leeks, carrots, cubed lamb, sweet potato all chucked in together with some stock, good seasoning and importantly about 4 fluid oz of proper orange juice. Cooked for at least 90 minutes on about 180 centigrade and thicken as necessary.

Its delicious and goes down well with the small people too as the orange juice gives it quite a sweet flavour....

Good thinking Lucycat, i love that website too, uktv food channel is my other weakness alongside mumsnet! Only tried putting in lamb tho didn't think searching for lamb casserole would work - doh! Im sifting through them now - thank you .

Doeas anyone have any other spicy/herby lamb recipes?

ok in all honesty I was in somerfield and seen the colemans dry mix sachet for lamb hotpo

i used lamb(obviously)
carrot and onion
sliced potato on top

cooked in oven gas mark 4 for 1.5 hours with lid on casserole dish then a further 30 mins with lid off.

Potatoes were to doe for best I had had in ages.

Hubby says his auntie who was originally from lancashire used to out a layer of shortcrust pastry over the potatoes and cook he said it wa lush
