Easy one pot lunch recipe needed please

Got the family coming round for lunch on Saturday and need to think of something easy to prepare for 7 people that I can serve with rice and veg. Something like Thai green curry would be perfect except my mum can't have anything remotely spicy. Also can't have any pork dishes.

I'm not the best cook, so the easier the better. Any suggestions for a tried and tested recipe?

Off the top of my head:
Tarragon chicken
Beef/Pork/mushroom stroganoff
Chicken Marbella (this is SO easy - just marinate, tip into a tray and roast - and as nice at room temp as piping hot. makes a nice sauce as it roasts too so nice to have with rice)

Whoops sorry - saw no pork, so pork stroganoff obviously out of the running!

I would go with chicken Marbella though. The recipe claims to be quantity for 10-12 but I have found it's the perfect amount for 8 greedy people.

in case you aren't comfortable with American cup measures, a cup is approx 250ml, so 1/4 cup oregano is the amount that goes up to about the 60ml line on the cup, 1/2 cup is up to the 125ml line etc.

Cauliflower and potato dahl. It's not too hot even with chilli flakes in. I use the Riverford recipe.
Chilli con carne - made this the other day, again, you can control the piquancy level. The children ate it so it wasn't hot at all.
Mushroom stroganoff.
Paella- Literally everything done in one pan.
