Cheese inspiration

It's my turn to make lunch for three friends. I am going to make a roasted veg tart, crusty bread, patatas bravas and a couple of salads. I would also like something cheesey Grin could just do a cheese board or baked Camembert; but I'm looking for inspiration, any ideas?

A baked Camembert with slices of garlic pushed into little slits then when you take it out of the oven drizzle a bit if honey over.

Camembert a favourite of mine although my mother in law doesnt like the "free for all dipping" thing, how about sliced hallumi shallow fried with red chillis, goes lovely with salad!

cheese straws and a mini cheese fondue to dip them in?

Thanks for the replies, any other ideas also welcome. I've just been leafing through a few books and quite fancy melanzane alla parmigiana. I find aubergines a bit hit and miss, do I really need to salt them?

One of my go-tos is goats cheese grilled over large portobello mushrooms. You can add pancetta or any other filling. Really quick and easy.

You could also do a cheesy vegetable soup instead of the veg tart -- would go great with crusty bread (why a tart and bread btw?) Cauliflower and blue cheese soup is really nice.

Thanks dreamin, I'm really fussy about goats cheese, but if I can pick up one of my favourites, that sounds great.

Why tart and bread? I love carbs, and they always seem to be good for soaking up the wine. There will be cake as well!Smile

I second the Halloumi. Cubes of Manchego would go well with the patatas bravas. Or I've also had a nice thing where you crumble blue cheese into leaves of chicory and drizzle honey over the top - sounds odd but it really works.

Yotam Ottelenghi's Caramelised Onion Tart is mindblowing - full of goats cheese..much tastier than roasted veg tart...it's one of the best tarts I've made.

I'd serve it with this Roasted Parsnip and sweet potato with caper vinegarette Delicious!

Are you wanting to do tapas? Because I wouldn't mess about with Manchego...get a good one, buy some Membrillo and a crusty loaf and leave me in peace to munch.

PeppermintCream · 08/03/2012 08:43

No it's not really tapas I'm aiming for, just a few side dishes. The tart is at the heart of the meal Wink
Think I'll give the halloumi a go. Thanks

Here's a great Haloumi salad - it's quick & easy too!

Thanks Betty, I love chickpeas. In think this is the one Smile

Thanks everyone for your suggestions, I look forward to trying them all.
