Do you blind bake a puff pastry pie base?

Or can you just put in the filling, top it, and bake it all at once?

I'm using a metal pie dish, so wonder if it will cook through without blind baking... I would usually blind bake with shortcrust, but not sure about puff...

Ok, so according to Mary Berry you don't need to blind bake a pie.

You can do, but you need to fill it really well with dry beans or something otherwise it goes all puffy and rises up.

I don't blind bake pastry for pies and end up with a soft base - not mushy (that just means the pie is undercooked). Quite like it that way (the soft, not mushy).

I wouldn't use puff pastry for the base of a pie tbh. Why not just cook in a pie dish with a puff pastry top?

Ok- it did NOT work, Mary Berry LIES.

Have since done one blind baked using puff, and it was lovely. Can't stand top-only pies; they must have a base Wink

So, yes, blind bake.

If you want to do a puff pastry one, don't do it in a pie dish - do it on a baking sheet instead and get the sheet nice and hot first.

Oh and I've only done this with quite dry fillings.

I'd use short crust pastry (blind baked) for the base and puff for the top.
