Anyone got a good chicken and rice recipe?

I'm feeling a bit off it, early days and all that. Chicken and rice is what I fancy but not sure what else. Any ideas?

Jambalaya? I got the recipe from bbc good food website. Nice and easy - kids enjoyed it so it must be good.

Fancy either of these?

coconut chicken with lemon rice
chicken risotto

or just make plain chicken and boiled rice and maybe some peas or sweetcorn and add a bit of soy or seet chilli sauce for some flavour

Very very easy, tho you need a slow cooker.

Chuck a load of chicken thighs in, add a jar of pasta sauce (currently using an ALDI meditteranean veg one) put on low, cook for roughly 7 hours et voila!!

If you're feeling healthy add some peppers about an hour before serving.

Serve with rice cooked in the Pampered Chef rice cooker (my new toy - bloody marvellous!)

All the family seem to enjoy this, its very low in fat and sooo easy. Great for days when you're working, I love coming into the dinner already practically madeSmile

for really simple dinner plain basmati rice with roast chicken peas and some pesto to dip the chicken in or a good slug of soy sauce over the top. sounds very dull but very lovely when you fancy something simple
