apart from sweet and sour, what can I do with it... need inspiration!

What about having it cold with dauphinois potatoes and red cabbage?? Not too exciting, I know, but tasty.

You can shred it and stew it quickly in some barbeque sauce until heated through - serve it on buns for barbeque pork sandwiches. Great with a side of coleslaw!
