Carrot soup?

Chop some into small cubes and freeze them ready to chuck a handful into the base for spag bol/cottage pie etc every now and again?

Carrot and lentil soup with some curry spicing is lovely. As is carrot and orange soup.

grated carrot salad (grate carrot, dress) or add toasted pinenuts to bump it up a bit
