Mine is chicken casserole:

2 carrots
1 onion
1 or 2 courgettes
1 carton of tomato passata
1 500g pack of fresh chicken thighs (frozen)

I chop veg and put in large casserole pot, tip passata over and then frozen chicken on top. Put in at 160/170 for 4 hours

Serve with pasta and sprinkle grated cheese

I sometimes add wine/pepper/garlic. But even without its yummy

Hi there,

I put a load of cooked pasta in an oven proof dish. Add in a big tin of ratatouille, seasoning, sliced mozzarella on top and in oven for 20 mins or so!

Really quick and really yummy!

Mine has to be ham, egg and chips.
Cook a small gammon in the slow cooker for as long as you need to, buy chips from the chippy on the way home (usually from work or other event).
Fry eggs for each person, dismantle the gammon (because it can never be sliced after it's been in the slow cooker) and serve with the chips.

I also make a quick pasta dish.
Put pasta on to cook.
Whilst pasta is cooking fry off some diced pancetta, sliced mushrooms and courgettes. when softened add a couple of spoonfuls of pesto and some creme fraiche.
add some peas or sweetcorn to the pasta a few minutes from the end. drain and mix together.
I make the sauce bit with all manner of variations, sometimes using chopped ham and no mushrooms or courgettes. sometimes with cooked chicken or sometimes with leeks, mushrooms and peppers.
Anything goes so long as you like it but it's start to finish no more than 15 minutes.

Ooh I like your thread, I have a 20min max attention span when cooking! Does carbonara count? Boil spaghetti, fry bacon, mix together, take off heat and mix in 2 beaten eggs, parmesan and black pepper.

Pop into M&S food on the way home from (sh1t) day at work. Turn on oven. Shove in.

Lazy. Also do the pesto from a jar. Or ready made pasta sauce if my homemade stash in my freezer is gone.

Chickpea tagine - fry onions, add cumin and cinnamon and sultanas or dried apricots, add tin of chickpeas and tin of tomatoes, add water and cinnamon sticks, bring to boil and simmer for 30 mins.

My perfect friend was describing how she needed to rustle up something quick for tea, so she just got some veg and other stuff and made a quick leek and potato soup. DH pipes up, 'Yeah, Skiving does that - Heinz or Baxters?'

Onion, bacon, garlic in frying pan for a couple of mins. Bung in a chopped chilli, some chopped tomatoes, and a slug of wine (if you have it) and simmer. If you've got one, add the zest of a lemon.

Do all of that while spaghetti is cooking.

Combine.

Eat.

Probably takes about ten mins.

Or my alternative what actually happens if the kids aren't around is to stand at the fridge and eat cold leftovers. And cheese. Wink

My favourite easy pasta dish:

  • cook spaghetti
  • heat up some low fat cream cheese in a pan and add some chopped up smoked salmon and the zest of a lemon (and some juice if it needs more lemonyness)
  • mix with pasta and serve. Yum!

Poverty Pasta (not for the faint of heart)

Boil pasta - it's good with linguine. While this is cooking get ready with: plenty small cubes of salted butter, some peeled garlic ready to be pressed, plenty grated parmesan, juice of a lemon (add some zest if you've got time).

As soon as you've drained the pasta add the cubes of butter. Before you've stirred them in crush the garlic on top of the butter, then heavy dredge of parmesan, then the lemon juice, good pinch of salt, plenty pepper. Combine. You need to do all this at speed while the pasta is still hot otherwise not so good.

Divine and vampire repelling.
