What can I do with pesto?

Apart from stirring it into pasta or putting on pizza?
Never bought it before, got green one and stirred into pasta with Parmesan on top. Was just wondering what else I could do with it please?
Also is red one or any others worth buying? I saw rocket one too

Stick some on top of a salmon fillet and bake in the oven -it's lush
Soften chopped onions and peppers in some, add diced chicken -cheats fajitas

Toast pizza - bread, pesto cheese on top under grill
mix with philly for great dip with carrot and cucumber sticks
mix with philly stuff under skin of chicken breast bake in oven
mix with bread crumbs on top of salmon then parmesan on top
pasta mixed with fried lardons and garlic mixed with pesto and parmesan
stir through a teaspoon in a risotto usually with courgette in it.
As you can see I also find left over Philly in my fridge.

Lovely in a baguette/sandwich with tomato and mozzarella.
Or stir into steamed spinach and serve with pan-fried cod/salmon/chicken/beanburgers.

Fry some bacon/pancetta pieces with some sliced mushrooms until the bacon/pancetta is crispy, stir in a small tub of creme fraiche and a big dollop of pesto and mix into cooked pasta. It's delicious.

Also, pesto mixed through pasta with halves cherry tomatoes and torn mozzarella is yummy.

You can also use it to coat chicken breast prior to cooking and add to cheese and tomato sandwiches and pizza. I tend to mix any last bits out of a jar into bolognese type sauces too

The dish I usually do with (red) pesto is pasta salad type served cold. Great for lunch box using left over pasta!
Cooked pasta, stir in a few tablespoons of red pesto, few tablespoons of mayonnaise, some chopped up red pepper and some sweetcorn. Tis yummy!

Pesto & breadcrumb crust on salmon

Sliced mozzarella, roasted veg (courgette, pepper & onion) in a ciabatta spread with pesto - YUM!!

Mmmm will buy some red next time I go shopping. Is it worth spending more for the more expensive stuff or is the supermarkets own usually nice? Smile

Mix with breadcrumbs put on top of fish and bake - yum yum

Also put onto any pizza Grin

Oh and spread inside pitta bread then griddle

I dollop it on bruschetta too, and home made focaccia (with cheese and fresh toms/basil). Yum. Not sure if it actually tastes different from the green stuff, but the red is definitely prettier!

I made some hummus the other day and spread it on a toasted bagel. One side hummus the other red pesto. You can use mozzarella or whatever?

Some fab ideas on this thread though.

Cut up chicken filets or breathy cover in pesto and oven bake. Pesto chicken - children love it.
