Roast Chicken leftovers

I'm sure this has been done before but would love some inspiration for that post-roast/pre-stock moment! Love the roast, love te sandwich the next day, love making stock for soups and risottos but have never managed to do anything terribly exciting with the left overs before I use the carcass for stock. Who can inspire me with something which doesn't involve tinned tomatoes and some chopped onion? Thanks!

With pasta and broccoli or greens, good olive oil capers and with or without parmesan.

Any variation of the following - stir fry, curry, fajitas. I find we get at least three full meals for the four of us (2 adults, 2 children) off a 5lb chicken.

Chicken croquettes Spanish tapas style
Chicken pie, pad out with a tin of sweetcorn and bacon.
Chicken, rice stir fry

Stock made in the slow cooker and then soup of your choice.
Made a great soup with all the roast leftover potatos, veg and chicken scraps.

I fry onions and mushrooms then chuck in a tin of condensed mushroom soup and the shredded dark meat and some white wine then stick it in the bottom oven (Aga) for a few hours then serve with rice.

I love The Pioneer Woman's Chicken Salad recipe . Ignore the cooking the chicken part obviously, since yours is already cooked!

It is really good.
