AT Christmas, I made open custard & mince pies with puff pastry, you could probably do something similar but replace the mincemeat with stwed apple or something?

Here is the recipe I used ..here

You can use it to make apple slices or a whole apple cake, just cut some apples in segments and arrange them over the pastry, add some sliced almonds, then sprinke with some sugar -depending on how sweet your tooth is-, and a bit of lemon juice and sprinke with some cinammon and sesame seeds. Then just bake in the oven until the pastry is golden.
If you don't like almods, cinammon or sesame, just leave them out.

I was going to say what MeeWhoo said but with pears.

Roll out the pastry, cut it into portions sized circles. Peel and slice a pear and arrange artfully in a circle on the pastry. Sprinkle with sugar. Bake. Sprinkle with icing sugar to serve.

Also, although tecnically not the same as a croissant, you can use it to make it croissants, even with chocolate or other fillings.
Cut the pastry into triangular shapes, place the triangles pointing away from you and then roll starting from the bottom upwards until you get a roll, just curl the sides up a bit to get the croissant shape. If you want them filled, use for instance chocolate paste and spread it in a straight vertical line in the middle of the triangle, not too close to the edges so that it doesn't sip out.

Nice idea Carrots, I never thought of trying it with anything other than apple, will do it with pears next time!

hello all

thank you so much for all your ideas, i did my online shopping yesterday and for some reason even the replies yesterday didn't come up on my computer, very strange...so i decided on jami'es banana tarte tatin that i made a week ago and was scrummy, will not individual portions unfortunately but will just have to make do! anyway i have some wonderful ideas here for next time i'm stuck with a pack of puff pastry. i love the idea of open mince custard tarts, and the croissant style pastries sound yummy too :)

many thanks
