Help me with fajitas!

Anyone got any tried and tested fajita spice mix recipes? I usually use Old El Paso, and love the way they taste, but I'm trying to be a bit more home-made in my cooking. Made some tonight which were a bit Hmm Can anyone help?

I don't know the authentic recipe but I use ground cumin and hot chilli powder and have always had lots of compliments. I imagine some fresh coriander would be nice in it too but I have never done that.

thanks secrecy! bumbums and stringcheese I may well stick to packets of sauce if my forays into being "authentic" flop horribly.

nbee84, thank you, that looks pretty good. I think I put too much ground cumin in my last attempt, and probably also too much ground coriander, which perhaps it doesn't need at all. carrots, I'm hoping 15mo DS will eat it so I need to hold back on the chilli powder and investigate other spice options!

Maybe just some fresh coriander chopped through it would do the trick then.

I used to use the discovery spice mix, then copied out the spices in the ingredients list and re-created myself. I just played around with the quantities of each according to what we like most and if anyone who does/doesn't like very spicy food is eating too. Much cheaper too Grin

There's a fajita mix in the Schwarz range of spices that makes me feel almost as if I'm cooking fajitas from scratch Wink

I've made that mydish mix before and would say don't bother with the cornflour at all, just use the spices. The cornflour is totally unecessary and leaves a thick and burnt yet raw taste to the meat.
