We are chicken sitting for neighbours and have now got 13 eggs to use up
Any nice baking recipes that will use a lot of them up? Sweet preferable to savoury

Not meaning to sound boring, but if you put them straight in the fridge they will easily last 5 or 6 weeks and still be perfectly nice and fresh. A nice big Victoria Sponge will take 4 or 5 eggs depending on their size.

I know they'll keep but shame not to use them now and we normally get given 6 a fortnight passed to us anyway

meranges are best made with the freshest eggs - so make meranges into little dolops and when baked squeeze together with some cream.

custard with the egg yolks left over this is a good recipe for custard

Make a good size cake tray bake with 4 eggs and 6 oz of sugar butter and flour, add in 4oz of almonds ground and put treacle and pinapple or sliced oranges or mandarins at the bottom of the tin and turn over once baked - only need to grease the sides of the tin.

I know it's not baking, but the freshest eggs are the best to poach. That's what I would do with some of them (smoked haddock and poached egg, or bacon, beans and poached egg)

I know it's not sweet or baking but homemade mayonnaise is delicious and fairly easy.

13 eggs??

I had 43 once....fortyfuckingthree!!

Quiche, custard, swissroll, bearnaise sauce, mayo, pavolas, scotch eggs....although don't try this with really fresh eggs, they won't peel, dippy eggs and marmite soldiers, poached eggs on toast. Lemon meringue pie, lovely fat omelette.

TBH - I purchased 10 eggs yesterday and have 5 left today, 4 went in the cake and one went in the egg fried rice.

We will probably have poached eggs with beans for breakfast in the morning so another two or three gone...

leaving 2/3 eggs for the rest of the week.
