Beetroot cake!

Has anyone a recipe for beetroot cake? I remember seeing one somewhere that had chocolate and tofu in it (I know it sounds horrid but it looked nice).

I have one for beetroot chocolate brownies that is great:
500g whole raw beetroot, 100g unsalted butter, 200g plain choc (70%cocoa), 1tsp vanilla extract, 250g caster sugar, 3 eggs, 100g plain flour, 25g cocoa powder

peel beetroot, roughly chop and put in large bowl. Add splash of water, cling film and microwave for 12 mins or until tender.
Heat oven to 180. While bbetrrot cooks line a brownie tin. Roughly chop the chocolate and cut butter into cubes. Drain cooked beetroot and put into processor with choc and butter and vanilla. Whizz til smooth.
In new bowl whisk sugar and eggs until pale and foamy. Sppon in beetroot mix and use metal spoon to fold it in. Sift in the flour and cocoa powder and gently fold.
Pour into tin and bake for 25 mins or until risen all over with just the merest quiver under the centre of the crust. cool in the tin and cut into squares.
