Pancakes, the basics please.

Hi, can Any kind mumsnetter tell me about basic pancake batter? How do I make it?

I can only do scotch pancakes and got the recipe by googling for it. Have found these:

pancakes

the recipe I used for scotch pancakes was:

4oz self raising flour
2oz caster sugar
pinch of salt
4tbsp milk
1 egg

This makes about 3 traditional pancakes so multiply up as needed

1 egg
2 heaped tablespoons plain flour
125mls milk
a little melted butter
pinch salt

Tips for cooking....

  • Get your non-stick pan hot enough so that a small amount of butter sizzles on contact but doesn't smoke.
  • Loosen your first pancake with a slice/turner. Once you're on pancake #2 they'll come away more easily.
  • Regrease your pan with a little butter every other pancake.
  • Keep cooked pancakes warm on a heated plate and cover with a tea towel
