If it was me (I'm veggie btw) I would do veggie starters all round to keep it simple, soup would be quite simple and you can make it in advance.
I would then buy something like Quorn fillets in sauce as a main and serve it with the same spuds and veggies as you are doing to go with the chicken (assuming that's what you're doing).
As a veggie I get a bit embarressed when people go to loads of trouble to cook something just for me and I don't mind the shop bought option at all.
