Za'atar

Have fallen in love with Yotam Ottolenghi's Plenty and want to make his pizza this week which asks for za'atar. Don't think I can get it locally (am in Nottingham), so have googled recipes.

Firstly, recipes vary wildly - all seem to want marjoram and sesame seeds, others want, in addition, sumac, thyme, oregano, cumin, basil......

So, can anyone recommend a recipe?

Also, the herbs - are they fresh or dried? I assumed dried, but one recipe I read left me a little (more) confused....

All dried. Sumac, thyme, majoram, toasted sesame seeds, salt and oregano. Blend/pound it all up but save some of the sesame so that you have ground and whole in it. Yum.

To anyone who has made this pizza ... I am trying to resist the urge to add garlic to the spinach, do you think it would be a good addition?
I add garlic to most things! Grin

HuevosRancheros It's Betty of the small room, I've name-changed. I don't think garlic would ruin it....I must admit it goes into nearly everything I cook too. Blush

Made Yotam's Sweet Potato Cakes with a yogurt sauce, this evening and served them with a chickpea, carrot & lemon salad - it was one of the nicest things I've had in a long time - the dcs loved it too.
