Freezer food for a vegetarian

Do dishes with beans/lentils/grains freeze well?

Can you suggest any one-pot meals for a dairy-free, occasionally fish-eating, vegetarian? Things that she can pull out of the freezer and just reheat without any further effort after her baby is born.

Chilli concarne with sweet pots not beef. Obviously.

I cook mine in a slow cooker and freeze.

Just a boring word of warning - I filled my freezer up with bolognese, chilli, etcfor when my baby was born. Then discovered that the garlic went into my milk and made him get really painful wind :( So maybe do a variety of things (if poss), just in case

But it's a lovely thing to do :)

PS Does she eat quorn? The chunks casserole and freeze well

Not sure about Quorn - it's usually got dairy in it.

Does tofu freeze?

Tofu does freeze, the texture changes, but it's still OK.
The fried tofu puffs freeze well, make a great Thai curry :)

You can find the fried tofu puffs in a Chinese market. Very handy to have to make a quick pot of noodles.
