What could I make with Leeks?

I have Leeks, potatoes, onions.

Have made Leek and potato soup in the past and also baked leeks.

Can anyone come up with other suggestions?

Jamie Oliver has an amzibg leek and turkey our which I make every year. I've also used it with chicken and a poultry/ham combo tis lovely.

Ooh I love leeks.
Leek and potato soup, cheesy leeky pasta (good with bacon), cheesy leeky potato bake (again good with bacon), I always put leeks in pies, or they are nice as a jacket potato filling.

Ooh, cheesy leeky pasta with bacon is a favourite in our house too. The potato bake idea sounds good too, there may be some experimentation with that soon!

Stir softly fried leeks and aduki beans into a light cheese sauce, top with a savoury crumble mixture and bake in the oven. Yummy.

I do the sauce for the potato bake exactly as I do it for pasta, but pour it over sliced par boiled potatoes. Then bake in the oven - is fab with sausages!

Chop and steam the leeks. Wrap in nice smoked ham to make cylinders. Drench in strong cheddar sauce. Bake. This is also nice with chicory.

I add them to my Dauphinoise Potatoes - start off by slicing into 1cm pieces and softening slowly in butter (lots of!). Add a couple of minced cloves of garlic and cook off for a couple of minutes. Add a generous glug of double cream and an equal quantity of milk, some grated parmesan (though cheddar will also work well) and season well. Add the potatoes (sliced thinly) to the mix and bring to the boil. When the potatoes are slightly softened, pour into a baking dish, cover with foil and bake for 45 minutes at 200 degrees. After this time, scatter with a good handful of cheese and bake uncovered for another 15 minutes.

Goes beautifully with any roast meat and with the addition of some bacon lardons, makes a good week night supper dish.

sweat the leeks stick in apot with onion and chicken, chicken stock, mash your potato and put on top - a la shep pie stylee

We make this fantastic Leek and pancetta quiche. Yum yum yum. Perfect Sunday food, and excellent leftover slice for lunch in Monday.Smile

Leek risotto. For tea tonight we had leek risotto - started by gently frying leeks, then I took them out and cooked the risotto rice as usual, but with a glassful of leftover red wine rather than my usual lemon juice. Toasted a few chopped walnuts, and added these at the end with the leeks, a little butter and some cheese. Awesome Grin.
