rhubarb & low fat dessert

bought some rhubarb to make dh rhubarb crumble but I'd like something to do something low fat with it as well...

so low fat rhubarb dessert pleassssse???

mix it with some fat free fromage frais?

Mix it with some low fat custard for a rhubarb fruit fool, or low fat greek yoghurt?

Whip some low fat cream cheese through with some sweetener, use as a topping for the rhubarb?

Blend down completely and make a sorbet (the articially sweetened varity)
