Emergency menu help - terrible fussy/vegetarian/pregnant guests combo

I need a Sunday lunch for 6 adults and two primary school children.

One adult is vegetarian, so I either need one vegetarian meal, or one vegetarian and one carnivore.
Two of the non-veggies don't eat cheese, and one doesn't eat mushrooms, so a single cheese/mushroom based dish is out of the question. The vegetarian doesn't eat lentils, and DS is highly sensitive to chillis so curry is out. One of the carnivores is heavily pg, which rules out a few things. Also no fennel, or aubergines.

I don't want anything that involves last minute prep.

I think the best bet might be two pies, one veg, one meat with some nice veg side dishes

Does anyone have any good pie recipes? Or any other brilliant plans?

I'd do a Sunday roast with an alternative veggie 'main' - e.g. Mushroom Wellington www.nigella.com/recipes/view/Mushrooms-Wellington-5224 or vegetable tart or similar.

For more fun - you could do burritos.

provide in the centre of the table

  • Tortillas (lots)
  • tortilla chips
  • slow cooker chilli beans
  • some kind of grilled or fried meat with and without fajita seasoning
  • grated cheese
  • chopped tomato&lime 'salsa'
  • sour cream
  • boiled rice
  • lettuce
  • guacamole

And let everyone stuff their own burritos with their favourite fillings.

tequila cocktails - and that's a niiiice Sunday with friends.

I forgot to specify - my 'chilli' beans are cooked without chilli (to DC preference) - and then me and DH add chilli flakes to taste at the table.

How about two shepherd's pies - one meat and one veggie - and a big bowl of mixed salad to acccompany? All can be prepared in advance, whack pies in oven 40 mins before serving.

Shepherd's pie with SALAD? Is it just me or does that sound a v odd combo?

I was thinking toad in the hole - if it needs to be posh, would posh sausages work well enough? Then the veggie can have some of the v. nice either quorn or cauldron sausages and feel like they are eating the same as everyone else. Then veg as you fancy and gravy made with onions and veg stock so you don't have to make two lots.

Shepherd's pie with salad is indeed odd - but I have a good recipe for a mushroom and chestnut version which is rather good so with the addition of M&S posh veg side dishes that might work rather well
