I push this recipe a lot but that's because it's delicious! You'd need to up the quantities/supplement with other stuff but it's always popular.

Pot roast chicken is v simple and delicious. Got potatoes, onions and peas in and makes it's own sauce/gravy thing. Easy with kids too as the flavours are familiar. Pot roast pork shoulder. Again easy and delish. Onions, potatoes and mushrooms, makes it's own sauce and only need to whip up a green veg on the side. Nigel Slater does a nice Spanish style one pot gammon with tomatoes, chorizo and butter beans. And Rick Stein does a lovely sausage braise with lemony potatoes which is a really nice light take on a casserole. Any recipes happily provided should you request. I love one pot Sunday meals as I find a full roast a total faff and I'm totally bloody lazy and sometimes hung over on a Sunday.
