Over-bought soured cream

I accidentally over-bought soured cream and now have 600ml of the stuff going spare (it's been a long day). What can I do with it that's easy, quick and store-cupboard friendly?

I enjoy it on stewed apple for a warm breakfast sometimes. Topped with chopped nuts perhaps.

We use sour cream for dips, mexican food. We also stir a dollop into red pasta sauce to make it creamy. It is a key ingredient of stroganoff, if you have mushrooms, onions and steak.

Nigella adds it to soup.

I have a fab choc cake recipe (good food) that includes it.

Lots of ina garten cakes use sour cream as it makes them really moist - have a google.

You could make swedish meatballs, the sauce uses SC.

You could make stroganoff, which also uses SC.

It actually keeps quite well so you could use some for supper tonight and for a cake at the weekend.
