Leftover mash, what can I make?

Ideas please.

I was wondering about potato scones? (not too sure what they are but like the sound) Does anyone have a good recipe for these?

Potato cakes?

Add some cooked bacon/onion/chives/cheese and make into flat round cakes, about the size of scones. Cover in breadcrumbs and fry on either side. Yum.

Potato Cakes. Mix into the potato either a tin of corned beef or (my favourite being vegetarian!) sage & onion (or other) stuffing. Put the dry stuffing in a bowl and add some hot water (but not too much), allow it to soak it up (it needs to be fluffy, not soggy) then mix into the potato, make cakes (like fishcakes) and coat in flour, fry in a little oil or butter. YUMMMM.

Fishcakes?

This recipe uses fresh fish, but I've made them before with tinned tuna and I'm sure Delia or someone says that tinned salmon is better than fresh for a fishcake.

Gnocchi. Mix with equal weight of flour, season and treatment like fresh pasta. Stuff small balls with cheese, meat or veg and boil for a few mins. Add usual pasta sauce.

Tinned salmon makes excellent fish cakes - I don't like tinned salmon but as a part of a fishcake it is very good.

Leek and potato soup - 1 leek per potato sized lump of mash; fry off leeks, add potato and big jug of stock, boil for 10-15, blend till smooth, add more water if too thick. Needs salt and pepper - can be really nice with a beaten egg swirled through at the last minute but not everyone likes that.

I've done the salmon fishcakes in the past - delish with some sweet chilli dipping sauce.

The potato cakes sound just the trick, that's the sort of thing i was thinking of, frying it with bacon and onions mmmm All things are improved by bacon!

My DP dioes me mashed potato cakes with nothing in them, but smoked salmon with a mix of creme fraice and horseradish blobbed on top. Its yum!

Irish Potato Bread - So so lovely and so so simple!

Ingredients
?450g (1lb) potatoes
?30g (1oz) butter
?1 level tsp salt
?100g (3.5oz) plain flour

Method
1.
Peel the potatoes, cut them into small pieces, and put them in a pan of boiling water. After about twenty minutes, or as soon as they are soft, drain them and mash them up so no big lumps remain.

While still warm2, mix in the butter and salt.

Start working the flour in. You may not need it all, depending on the texture of the potatoes. Just add enough to make a good, stiff dough.

Roll the dough out to form a circle about 1cm thick, and cut into triangular quarters.

Cook on a hot, dry frying pan3 which has been sprinkled with flour to prevent sticking. No oil or fat is needed; the purpose is just to cook the dough, not to fry it.

Turn the bread occasionally; it is ready when both sides are golden brown.
