chicken breast ideas needed

got some chicken breast fillets for dinner tonight and need some ideas for something a bit different to do with them.
not stirfry, nothing with mushrooms(ds detests them) not chicken nuggety things.
hope someone has some ideas!! thank you!

Bash them out a bit and stuff them with a mixture of soft goats cheese and sundried tomatoes, then roll them so the stuffing is all inside and wrap in foil (bit like a sausage and cook in the oven).

Marinade in garlic, oliveoil and lemon, then pan fry and finish in the oven.

4 skinned chicken fillets
4 thin slices parma ham (i'd use any ham going tho )
4 cheese slices (can be kraft-what-the-hell-is-this-plastic-doing-in-my-sandwich-type, or could be acceptable cheese sliced)
1 red pepper, grilled, deseeded, sliced
4 large sage leaves
seasoning

bash a bit, lay ham on each breast (oo-er... oh the chicken, I see ), cover with cheese and pepper, top with sage and season. Roll up firmly, wrap in kitchen foil shiny side outwards, stream for 10 - 12 minutes, unwrap diagonally and slice.

Stuff with boursin or other soft garlic cheese, wrap in bacon et voila!!

rub on some cajun spice and drizzle some soy sauce on them and serve however (pasta , new pots?)

cut them up and roast them in an oven dish with sliced sweet potatoes, parboiled a bit first, cherry tomatoes, olive oil, cumin seeds and chilli flakes

Got a really excellent child friendly chicken dish that I do with rice.

Snip up chicken breasts with scissors and lightly fry, add a bit of garlic if you like, when browned add some chicken stock (say 100ml) then about the same in single cream. Let it bubble for about 10 minutes (can alway add in more stock or cream if necessary) - I also throw in some frozen peas for the last 5 mins - serve with rice. My lot love it!

Slice 4 chicken breasts, couple of peppers and red onions, mix in juice and rind of half a lime, tsp of paprika and tsp of oregano, and 1 tbsp veg oil. Tip into frying pan and fry, serve with guacamole/salsa/sourcream/grated cheese and soft flour tortillas. Either make up fajitas or let everyone make their own
