"Spanish omelette" with onion, potato, sweetcorn and cheese, plus baked beans.

Usually cook from scratch, but kids have their tea at our childminders 3 days a week so I am not cooking for them every day.

But I do lots of quick things too, such as pitta bread pizzas or toast fingers with hummus, ham, fruit, etc.

insanityscratching · 02/02/2012 19:40

Easy meal tonight lamb cutlets, new potatoes and veg. I cook from scratch every night but don't often slave away for a long time tbh. We might have a takeaway once a month and sometimes I cook double the quantities and have an easy meal the following week and sometimes we eat the leftovers the following day.

Collision · 02/02/2012 19:42

Goodness Lou33!!!!

Where have you been?? How the devil are you? Grin

We had chilli, rice and tacos for dinner tonight. Made from scratch.

Frozen pizza tomorrow.

Fresh venison in red wine sauce on Saturday - DH is cooking from scratch.

Salmon and veg on Sunday.

We eat a real mix of things!

LeMousquetaireAnonyme · 02/02/2012 19:43

drooling and Envy at some of your meals!

Taffeta · 02/02/2012 19:56

DC had mac cheese with bacon which I made. DH had leftover Cottage Pie from yesterday that I made.

At the weekend we sometimes have fish and chip takeaway or Chinese/curry from supermarket, the rest of the time I cook. CBA/working days/cupboard bare nights are eggs or pasta.

cleanandclothed · 02/02/2012 20:03

Homemade tomato and lentil soup as I am sooo cold and have a sore throat :(
4/5 nights a week I cook from scratch, 1/2 nights we have defrosted batch cooked stuff, and once a week or less we have pizza/breaded fish and oven chips/pasta with bought sauce etc.

mousymouseprice · 02/02/2012 20:21

I would class 'defrosted batchcooked' as cooked from scratch...

aJumpedUpPantryBoy · 02/02/2012 20:34

Shepherds Pie tonight.
I cook from scratch most nights or use something I cooked earlier and froze.

We live too far out in the sticks to have takeaway so occasionally we have an M&S meal as a treat

BlackCatTryingToFly · 02/02/2012 20:43

Wow! Just came back to check on this thread and am amazed at how many replies there were.
Thanks everyoneSmile

I have looked through and wrote down some of the things I like. Some nights I just struggle for ideas so just get something out of the freezer but I would really like to get better in the kitchen generally!

We tend to cook most things from scratch but then have some leftovers that are then used for the next lunch or dinner - which means we only have to cook a few times a week.

Hepsibaaah · 02/02/2012 20:56

I cook from 'scratch' 95% of the time, but I tend to make large quantities and freeze food for when we're busy or CBA...home-made variation of ready-meals!
A treat is either something from waitrose or M&S, or a take-away curry (prob once a month)

drcrab · 02/02/2012 21:23

Had pasta with sausages and broccoli which was from last night as DS fell asleep in car on way back from nursery. From scratch though. But also made potato and leek soup from scratch. Since dh's redundancy we've been much more careful with money and try to meal plan. Because he now works from home it's all different routine now but all good!

lou33 · 03/02/2012 11:30

Hi Collision, I am still here, i just don't really post very much nowadays, but i am good thank you how are you? :)

ivykaty44 · 03/02/2012 18:27

Tonight we are having fish again it is simple and quick to cook Grin

Plaice suted with flour and seasoning along with jacket potato, Omani salad and peas and sweetcorn.

wotzypunkbunny · 03/02/2012 19:45

Got this from Aldi today .... good old ainsley harriott
Moroccan Tagine kit Highly recommend it - nice and spicy...

twas lovely - enough for a family of 4 (says serves 2 on pack)
but it went further as I did extra roasted veg and rice.
Used : 1 x large onion, 3 peppers (yellow, red, green) - pan fry in olive oil and then put in oven to roast - then served on top after it was all cooked.

It was all ready in 20 minutes and gorgeous.... :)

gazzalw · 03/02/2012 19:48

We're having chorizo and butter beans in a homemade tomato sauce with pasta....

don't tend to use ready-made meals in this house but some meals are pretty simple meat and two veg types!

bibbitybobbityhat · 03/02/2012 20:08

As proof that I do not cook from scratch every night:

Dh: M&S whole breast chicken kiev, anya potatoes, broccoli and carrots

Me: M&S haddock mornay, anya potatoes, broccoli and carrots (dh does not like fish)

Dd and his friend who came here for tea: pepperoni pizza, carrot and cucumber batons, vanilla icecream and red grapes.

Dd: having her tea out at a party.

If I buy ready meals I do make the effort to cook fresh vegetables or assemble a salad to go with.

FlouncyMcFlouncer · 03/02/2012 22:13

Mon-Fri, cook from almost scratch, weekends, takeaways or 'rummage in the kitchen and see what you can find'. I will buy jars of curry sauce or pasta sauce, but everything else is 'proper ingredients'. We eat a LOT of chicken - this weeks meals have been:
Monday - Accidental takeaway, due to kids springing unexpected stuff on me!
Tuesday - Sausages cooked in onion gravy in the slow cooker, with mash.
Wednesday - Meatballs in tomato based sauce with pasta
Thursday - 'Roast' chicken dinner - that is, the chicken was actually cooked in the slow cooker but we had roast pots and three veg etc with it.
This evening - chicken korma from leftover chicken, with boiled rice
Tomorrow, despite it being Sat and officially takeaway night, we'll have home made chicken pie with veg etc, as there's still plenty of chicken left.

Alibabaandthe40nappies · 03/02/2012 22:35

We cook from scratch most nights.

I do use some short cuts and ready made stuff (chips, pizza, breaded fish) but I don't use jar sauces or anything like that.

Tonight we had steak and chips with vegetables, tomorrow we are having pizza although not takeaway because it is too salty for the DCs, and then Sunday will be a roast.
Last weekend we had risotto on friday, pork stew on saturday and roast on sunday.

Weekday meals tend to be very simple, I generally make a bolognaise or casserole one day and we eat a third and I freeze two portions. Then at least one weekday we have something from the freezer that was made a week or two previously. Other weekday meals are things like fish with potatoes and veg, sausage and mash, meatballs and pasta etc.

Cristiane · 03/02/2012 22:41

I cook everything apart from bread from scratch. Even granola. And i make cereal bars.

I am a nutter. I need to stop! I work full time. I should just buy the odd ready meal. But I like cooking. Silly silly.

Thing is I have cooked so much and so often that I'm good at it and nothing else tastes as nice (unless I go to a really good restaurant or to somewhere of a cuisine I'm not great at, eg dim sum, Thai)

Cristiane · 03/02/2012 22:42

And if I didn't work ft I would make bread too... My dad did so it's in the blood...

MollyBroom · 03/02/2012 22:43

I do cook from scratch about 95% of time. Tonight we had spicy beef and bean casserole that I started in the slow cooker at 5 this morning I suspect in the age of breadmakers quite a few people make bread . I like making pasta.

Alibabaandthe40nappies · 03/02/2012 22:47

I like making my own bread, but only certain sorts. I buy bread as well.

WMDinthekitchen · 03/02/2012 23:04

I do some cooking ahead at the weekends. (Work full time) Otherwise, I do cook from scratch but not necessarily complicated dishes - frittata and salad, baked potatoes, grilled chicken, homemade "chunky" soups, risotto, pasta. Also use a slow cooker for cheap cuts of meat - switch on, add ingredients, go out to work. This week we had macaroni cheese with cauliflower, bacon and potato hotpot, turkey casserole, jackets with pepper ratatouile and soft cheese, chorizo and tomatoes with rice, homemade lentil soup. Have a veg curry and a cottage pie in the freezer which I will use up next week. If I am really tired DD will rustle up her speciality - pasta with onions, peppers and soft cheese or we will have soup (homemade, always some in the freezer, uses up leftovers) and toasted sandwich. Usually have fruit and/or yogurt for dessert. if I buy B & G's or other quite good ice cream we eat the lot in an evening

lou33 · 03/02/2012 23:36

Today i just cobbled together a pasta bake from whatever i had left in the fridge and freezer, so it was chopped up gammon steaks in a tomato sauce with mushrooms, onion, celery, rosemary and parsley, topped with cheddar and parmesan. I made bread with the breadmaker too but i rotate between using that, making it by hand or buying some in.
