Brussels sprouts and bacon..?

Have got a lot of brussels to use up, DD loves them, DS a bit less so, how can I combine them with some smoked bacon and get rid of them in one fell swoop? I also have some leftover mash to use up - have been racking my brains for a clever combination of all three with no luck. New veg box arrives today and I try really hard to use up the last one if I can.

Cook your sprouts in the normal way until just tender, dice your bacon small and fry until nice and crispy. then tip the sprouts in the pan (maybe halve the sprouts first) with the bacon and combine as a side dish.

Or, do the bacon as suggested, shred the sprouts and add to the pan and cook for a short time, and then bubble and squeak the lot with the mash! Or form into potato cakes with the mash and fry (basically the same thing as bubble and squeak). Season it all with salt and pepper before/during.

Cor, I could seriously go that and it's nowhere near lunch time!

I've just made roast sprout risotto, it was fab!

Sliced up sprouts, washed and in a roasting pan with olive oil, s&p and garlic. Roast for 18 mins while making normal risotto, then stir in at the end when you add the butter and Parmesan.

How about

par boil some potatoes and brussels.

When cold cut potatoes into cube and fry until crispy and cut up bacon and fry until crispy. Add sprouts cook until hot.

You could then add a poach egg.
