onions, potatoes, cherry tomatoes (although I don't like them roasted, they go squishy), a whole head of garlic, carrots and I sometimes put broccoli in for the last 15 minutes and rosemary.

10 minutes before you take roast veg out if you sprinkle a packet of feta cheese on it's gorgeous. The Greeks eat feta with everything!
