pork fillet help please...

Hi
I got a pork fillet cheap from the supermarket, need to cook it tommorow. Any ideas on what to do with it?

Roast onion, butternut squash and garlic in a tin for 20 mins with olive oil, then put fillet on top and roast or a further 30-40 mins. 15 mins before end add a lemon wedge and cherry or vine toms. Bloody gorgeous!!!!!

How about paprika pork? Fry up some sliced peppers until soft but not brown, chop the pork and add to the same pan until browned all over, add half a large jar of tomato and garlic pasta sauce (or a tin of chopped tomatoes in which case add some chopped garlic to the pan with the pork) along with some water so it's not too thick, and a couple of tablespoons of paprika. Cook gently with a lid on until pork is cooked through and tender. Serve with boiled rice or pasta. Delicious!

Pan fry a sliced onion, add a chopped clove of garlic and a red pepper, cook for a bit, add sliced pork with plenty of s&p. Then add in a tablespoon of grain mustard and plenty of cream or creme fraiche or mascarpone with a little milk. Serve with mash and steamed veg.

I wrapped mine in bacon, roasted for 50 mins, then deglaazed pan with white wine, a little chicken stock and a splash of cream, served with plain pasta and veg, everyone loved it.
