6 million beetroot in my veg box this week, what do I do with them?

Well, maybe only 4.... but I still need ideas. I had them last week, had never cooked them before, so boiled them and put vinegar on them. They were nice, but I feel I have "done" that now

Anyone got any great recipes? Quite fancy roasting them, but will that take forever?

Pickle them. The little pickled cubes are fabulous with hotpots and shepherds pie.

Beetroot risotto is yummy.

I made the beetroot brownies and they were horrible - well, I didn't like them, the friends I served them too loved them and so did their kids. I love beetroot in a salad - with puy lentils and cheese, or with smoked mackerel and rocket, or just roasted in any salad, but in brownies, just not good!!!
Roast them with olive oil, S+P... yumlicious
