Buttercream icing question.

I've not made the cupcakes with the big swirl on the top ( I do glace icing fairy cakes for dc) because I don't like butter.
I've tried sunflower spread or marg but it doesn't go fluffy, it's greasy and 'stretchy'.

If I used unsalted butter ,icing sugar, lemon juice and vanilla (I use these flavouring to make icing less sweet) and really whisked it, would it taste like cream rather than butter.

I can feel a Butterfly Cake Baking Session approaching.

Well so long as you get your quantities right it shouldn't taste of butter

Buttercream shouldn't taste like butter though, mine never does Confused

Well, I think buttercream made as you suggest would taste yummy. But then I looooove butter Grin

I use a recipe that is 1/2 cup butter and 7 cups of icing sugar (1/4 cup milk + a drop or two of vanilla). It tastes sweet, not buttery.

you could try using creamed cheese instead of butter if you really dislike the taste

I use 40g of unsalted butter, 120g of icing sugar, vanilla essence and some whole milk. Whisk until pale and fluffy - takes a few mins and is enough for 12 cupcakes with a modest amount of frosting - not the huge gunky swirls

I use spreadable butter (Lurpak) for buttercream. It makes gorgeous fluffy light non-greasy, non-buttery buttercream.

Well I found a recipe I love n swear by GrinGrinGrinGrin

It's an American recipe! Swap crisco for Trex (yes I know Trex!) for the popcorn salt boil the kettle before you start add the salt (normal table salt i could find any popcorn salt in uk!)to this, this will be you luke warm water in the recipe....

You can do by hand mixer it bloody kills! 15 mins instead of 10 mins if mixing by hand rather than stand mixer!

This gives you pure white buttercream much easier than meringue icing! And colours take better as white not ivory!

I always use low fat cream cheese - we prefer it! But you could also try meringue icing - google for a recipe, my son loves it and it IS very fluffy and light...

I just keep adding icing sugar until it doesn't taste like butter any more...

I know, weird non butter eater.Don't like the texture or taste.
I use butter to cook with like a cheese sauce or fruit cake but not raw.

I saw Heston Blumenthal on TV with his orange Christmas Pudding last year and he'd made Brandy Butter without icing sugar.Just unsalted butter and brandy but it was whipped up till it was white.And the samplers said it tasted like cream.
That made me think, cream and butter are milk aren't they.

Will give it a try.

Just made a batch of little butterfly cakes with butter icing- fab!

Unsalted butter, 3X icing sugar, vanilla and a splash of milk!
Whisked with my hand mixer until really fluffy, it's lovely, like a vanilla cloud, not in the least bit buttery.And the texture is miles better than margarine icing.
