What can I do with celeriac?

Apart from mash or Rose Eliot's celeriac terrine? Does anyone know any nice recipes? (Low GI if poss, but beggars can't be choosers)

Chop it and par boil then roast it like roast potatoes ...takes a bit longer and are a bit softer than roast tatties but yummy. Use frylight if you want to avoid fat.

Grated and mixed with horseradish sauce and mayo for a salad/coleslaw type thing

mash with other root veg or just mix with mashed potato, lots of seasoning and butter - yum!

gratin is lovely - boil and mash with a bit of creme fraiche (half fat works fine) and salt and pepper, grated parmesan on top and stick it under the grill until it goes crisp on top.

Soup - peel, chop and roast with a little olive oil, herbs and seasoning. Cool slightly then puree in food processor, add stock/milk until reach consistancy required. Can also add onion & carrot to raosting process.

oooh,have just stolen mu friend's husband's celeriac and apple soup,had it twice at their house and is one of the nicest soups i've ever had
1 celeriac(500g)
3 dessert apples peeled,cored and chopped
1.2 litres/2 pints chicken or veg stock
pinch of cayenne pepper or to taste
salt and ground white pepper
to garnish 2-3 tablespoons finely diced apple
paprika

melt butter in large saucepan ans sweat celeriac and apples over mod heat for 5 mins or until veg have begun to soften
add the stock and cayenne pepper and bring to boil.lower heat and simmer covered for 25-30 mins or until celeriac and appples are v soft.
In blender/food process puree in batches till v smooth,transferring to clean saucepan.reheat gently.season to taste.garnish with diced apple and paprika.
